How does Elaine Not Die from Eating the Old Cake?

Peterman suggests she's in for a night of trouble and that it is punishment enough for eating it, but I would think that the mold, bacteria and toxins that could be produced over the years would be enough to kill her. I once ate a hot dog that had been sitting behind a couch on a dare from my roomates and I was in the hospital for a month with spinal meningitis and that thing wasn't even 1 month old, not decades.
